
We’re back in the Torino 6m motorhome cooking up a storm, again putting its clever rear dining space and fold-down workbench to good use because every cm of kitchen bench space counts when you’re cooking on the go.
Our trusted travel companion, the Panasonic 31L 4-in-1 Convection Microwave Oven (with 1300W of power), is doing the heavy lifting again. To keep things efficient, we’re making the most of its Combination function and handy Steam Shot for perfectly balanced results.
After our hot honey pepperoni pizza success, it’s time to try something slightly different: a gnocchi one-pan bake. It’s quick, comforting and endlessly versatile.. the kind of dish that proves big flavour can come out of a compact kitchen.
Ingredients:
- 500g Gnocchi - used the la Molisana brand which absorbed more water than other attempts. Have found Rana crisps up more so will depend on your texture preference. I would have preferred a little more crisp on the gnocchi but it was packed with flavour!
- 3-4 Italian pork sausages
- 1x bunch asparagus - snap the ends off and disgard ends, rough chop remaining stem
- 1x punnet cherry tomatoes (halved)
- 1/2 tsp oregano
- Crumbled feta
- Olive oil
- Water or broth - bit of trial and error as will depend on gnocchi. We found 50-60mL was more than enough
- Lemon
- Salt & pepper
Method:
- Line flat tray with baking paper and spread the uncooked gnocchi, tomatoes, asparagus.
- Squeeze the sausage in little pieces without skin - this will create a delicious flavour over other ingredients
- Season with sprinkle of oregano, salt & pepper
- Lightly drizzle with olive oil and 1/4 cup of water or broth
- Toss ingredients together and add to top section of oven
- On the convection microwave, press Combination 7 times. There are many different types of combinations/temperatures available - Combi 7 gives you high Grill and 230 degrees convection simultaneously
- Press Start - this will preheat the oven for about 10mins minutes (but we've sorted cheated and started cooking here)
- Oven will alert you to "add food", open and close door and add your 10mins of cooking time then press start
- As soon as cooking begins, hold down the Steam button until you hear a beep and press Steam once more. This will give you 2 minutes of steam that will puff your crust before it starts to grill
- During cooking process we took out of oven once for a quick toss and check wasn't too dry (steaming should prevent this). You don't want to be opening oven multiple times as you'd lose residual heat from preheat function
- Once cooking finished, remove from oven with glove
- Sprinkle on feta cheese and a squeeze of lemon juice
